Is Potato The New Super Food?

Potatoes. They are a staple food in our diet and come in lots of different varieties. The little potato gets some hate though since it is considered a carb and we live in a time where there seems to be a lot of focus on cutting carbs. Is the potato all that bad though?

I am often on YouTube and have my favourite people that I like to watch regularly. I follow some high carb low fat vegans and I was always interested in how they could eat so much plant based food and carbs and still look very lean and healthy. I was watching one of these YouTubers and came across some videos about how she was going to do a potato cleanse. Eating just potatoes was something I had heard a tiny bit about in the past but wasn’t something I had taken too much notice of. She explained how the potato has pretty much everything we need to live on and that for 30 days she was going to go on a potato cleanse (with none starchy vegetables) to see what it was like. It caught my attention and I thought that I would like to try it, not as committed as I maybe should be but still giving it a go.

So what have I been eating you may be wondering. Well I have been focusing my diet around potatoes and sweet potatoes. I have also been having some watermelon which is mainly because it is my favourite fruit and they are in season at the moment. (It’s the one time of the year I can buy them and I always eat a truckload. Ok slight exaggeration.) I will have some other meals with other plant based food occasionally if I am going out to eat but it hasn’t been much. I always cook my potatoes with no oil or fat and have a bit of low/no fat sauces on the side like tomato or sweet chilli sauce. My favourite meal is wedges baked in the oven with the skins on. I place them on baking paper and find that they don’t stick and I can cook them without any oil at all. I leave them in the oven on fan bake until golden and don’t even have to turn them. It is so easy and I love how I can just put them in the oven and don’t have to touch them again until they are cooked.

HighCarb Hannah and Spud Fit are two people that I am now watching regularly and I recommend checking out their videos for more information about it as they explain way better than I ever could. I personally find it interesting to see what other people are doing in terms of diet and the results they have.

I can’t remember exactly when I started but it has been about 2 weeks now I think and I am still loving potatoes. I have lost about 2.4 kg and I am feeling good. I know that my calorie intake will be down, as that is what causes weight loss, but I don’t feel like I am restricting. I eat as much potato as I want. It has given me a kick start to stop eating the vegan junk food and I want to base my diet around potato with some other whole plant based food added in.

I hope to carry on and keep posting updates with my results. Mainly for my own record but also for people that are interested to see how it works out. I want to try eating mostly just potatoes for about a month and then change to a starch based diet like what Hannah does usually.

I am sitting here at my computer trying to think about how I can start this post. Nothing is really sounding good and I don’t know what to write. What I do know is that I found an amazing chocolate cake recipe and that the pictures say 1000 words. So on with the photos.

The cake is free of animal products and yet you wouldn’t notice when eating it. The recipe calls for vegan butter and I use margarine but just check the ingredients because one I got without checking had beef fat in it.

This is the cake I make when we go out for dinner and get asked to bring dessert. It always goes down really well and everyone loves it. The icing gets a bit soft and splits a little when the weather is really hot but I find that if you keep it in the fridge then it is fine.

My Weekly Outing

I’m not really the party/ going out kind of person. It’s never really been my thing to go out where there’s going to be a big group of people and I don’t know enough people to get invited to things like that much anyway. Now with having M.E going out for social things has become even more rare. The most I go out is to work or catching a ride into town with my family when they need to run errands. I will occasionally go to the movies or visit a friend but it isn’t a regular thing and there will be times when that doesn’t happen for weeks or months.

One thing that is pretty regular is meeting my friend in town for lunch. We usually go once a week, though we have missed a couple of weeks lately. Our favourite place to go to is an Indian curry place and we have been going so often that the people working there know us now and will know what we want to order. They are always so friendly as well.

At first we would always order Butter Chicken then one time the man working there suggested that I try Chicken Jalfrezi next time. I did and I loved it so much that I just kept getting that. I soon got my friend to try it as well and it has become our regular thing. It’s nice going somewhere familiar where the people recognise you and know what you want. Though at first I felt a bit weird thinking that we go there too much but now it doesn’t bother me.

It good being able to get out of the house and catch up with friends. I don’t really talk to many people and find it easier sometimes to just text but I have really enjoyed this and look forward to when we go. Plus the food is amazing.

Healthy snack idea

Happy Friday everyone. A little while ago I was at the supermarket looking at the health food section and found a raw bar. It was dried fruit and nuts made into a bar, like a muesli bar. I got one to try as I am trying to find better snack foods for when I’m craving something sweet. It was really nice but I thought it would be easy to make. I had also tried something similar but in balls. I went to the supermarket and got some stuff to make them and thought I’d share with you what I did. I had made something like this a few years ago but forgot what I used.

For what you want in it is up to you. I went with dried apricots, dates, a mix of cranberries, almonds, cashews and also found some walnuts in the draw to put in. I decided to add some cocoa powder as well because I wanted it to have a slight chocolate flavour.
You want a selection of dried fruit and nuts, the dried fruit will be what helps it to all stick together so you want more fruit than nuts.

I blended it all together and found it was easier to do it in small batches. I used a blender but I think a food processor would have been better.

Taking some in my hands I pressed it firmly into a ball and put in a container with some glad wrap between the two layers. It made about 31 balls and I have put them into the fridge. You can make less if you want so that there is just enough for what you want that day but I decided to make more as I find it easier having something already made for when I’m not feeling well. I find that they are really sweet and just one or two little balls is enough to satisfy my craving, well most times.
